Heartbeat Poirier’s Creole Maple Hot Sauce
Since Cajun cuisine has Canadian roots it’s only fair to add maple syrup to a hot sauce to honour that rich in history way of cooking. Aged Cayenne peppers lay down a deep flavour base to which is added sweet maple syrup and smoldering Ghost peppers. Somewhat tempered by the sugary syrup, the heat is slow to come on and has a pleasant linger. This is a great sauce for those who are apprehensive about taking that step up to the hotter pepper varieties.
