Terrapin Ridge Farm Key Lime Pie Jelly
Tart, tangy and sweet, this jelly is versatile enough to go from appetizer (goat cheese on rye) to main dish (grilled tuna steak) to dessert (ice box key lime cheesecake).

Ice Box Key Lime Cheesecake
2 packages cream cheese, softened
1 can sweetened condensed milk
1/2 cup Terrapin Ridge Key Lime Pie Jelly
1 tsp vanilla extract
With an electric mixer beat the cream cheese until fluffy, continue to mix on low speed while adding sweetened condensed milk a little at a time, when fully mixed add jelly and continue to mix until well blended. Pour into prepared graham cracker crust, cover with plastic wrap and refrigerate until set, 2 1/2 – 3 hrs.
